Sweet Onion Mustard

This sweet dressing is terrific with fruit salads raw vegetables.

Sweet Onion Mustard Dressing:

Blend together on high speed:

Sous vide processed red onion (183F/84Cx1 hour), 1/2 ea.
Mustard seeds, 1 Tbsp.
Sugar, 1/2 cup/90 g.
Salt, 1 teaspoon.
White vinegar, 3 oz./90 ml.
Vegetable oil, 12 0z./350 ml.


Blessed with noticeably spicy overtones of onion and mustard, just that hint of tartness makes the end result seem greater than the sum of its few parts.
